Pork Tacos-Summer Deliciousness



Pork Tacos

Ingredients:
1 Pork Roast
1 yellow onion
3 cloves of garlic (minced)
1 1/2 cups beef broth
1 cup homemade salsa or your favorite salsa
1 tsp chili powder
salt and pepper if desired

Directions:

Cut roast into smaller chunks and place in deep pot on stove. Combine the remaining ingredients and bring to a simmer. Simmer for 3-4 hours until roast is tender enough to be shredded with a fork. Warm tortillas and add your favorite toppings. I learned from Simply Recipes to add the beef broth and salsa. I also added a touch of salt and vinegar to my lettuce as directed and I must say it is an excellent touch. I sliced up some mangoes, nectarines, and bananas for a light and tasty side dish. I must say this was a lovely summer meal.

Easy Pork Chow Mein



1 Pork Roast 1-2 cups
1 1/2 cups bamboo shoots
1 onion
1 1/2 cups celery
2 cups prepared pork gravy
1-2 tbs. soy sauce
2 tbs of butter
salt and pepper to taste
1 pkg crispy chow mein noodles

Here's the deal! This is a great recipe following a Sunday Pork Roast dinner. This is delicious, easy, and frugal since you are using a roast for two meals. So yesterday I made a pork roast prepared by throwing a pork roast in a deep oven safe pot with a little bit of water and salt and pepper. Cook for 4 hours at 320 degrees. I served it with typical mashed potatoes and gravy. The good part is the next day using your left overs you can whip up this tasty Asian dish!
Using 2 tbs of butter saute the onion and celery . Pour your left over pork gravy over the onion and celery. You should have about two cups of prepared gravy. If you don't have enough left over make more this way:
Ingredients

* 1/4 cup flour
* 1/4 pan drippings or margarine
* 2 cups water
* 2 tsp. flavored bouillon granules or 2 cubes


Directions

1. In medium skillet add drippings or margarine
2. Over medium-high heat, cook and stir until dark brown
3. Stir in water and bouillon
4. Cook and stir until thickened
Next, add sliced up left over pork roast and bamboo shoots. Bring to a boil. Add soy sauce and salt and pepper to taste. Finally, pour over crispy chow mein noodles. Serve and enjoy!




It was so tasty I forgot to take a picture of the final result. I just gobbled it right up!

My favorite Shredded pork!

This is similar to Cafe Rio sweet pork or Costa Vida! Make it for a crowd and they will for sure be impressed!

6 lbs Pork loin
1 can coke(not pepsi)
2 cups brown sugar
1 16 oz bottle of salsa

Cook roast in the crock-pot on high with about a cup of water. Cook for about 5 hours (less if using half a roast). Drain the water and add (mixed together) the coke, salsa and brown sugar. Pour that over the meat that you have shredded with a fork and cook for another couple of hours. If the roast is smaller, you might not need to cook as long.
This is best on your favorite tortilla with lettuce, tomatoes,black beans, rice and the tomatilla dressing (recipe to follow). Serve and Enjoy!

Easy Crockpot Porkchops

26 oz can of Campbells cream of chicken soup or cream of mushroom
8 lean porkchops
26 oz of milk
salt and pepper to taste

Brown Pork chops in skillet on both sides. Place pork chops in crockpot and cover with soup and equal amount of milk. Add salt and pepper. Turn on low and cook for 6-8 hours. When done pork chops should be so tender they fall apart and mixture should become gravy like. Best when served with mashed potatoes. Serve and Enjoy!
